Squidgy chocolate muffins.

Okay so, they don't really taste like full fat muffins, but they're healthy and filling and hit the sugar spot.

Squidgy Chocolate Muffins
Makes 8 - 2.5 syns each

2 Chocolate Weetabix (8 syns)
25g Self raising flour (4.5 syns)
1 teaspoon baking powder (0.5 syns)
3 tablespoons of cocoa powder (3 syns)
100ml semi skimmed milk (2.5 syns)
2 eggs
4 tablespoons of sweetener

Step 1: Mix the chocolate weetabix with the milk and leave to soak for a minute or so, then add all the other ingredients and mix it up until really combined and liquidy!

Step 2: Line a muffin tin with 8 muffin cases, if you wanted to make little cup cakes you could probably make loads and the syn value would be even lower. Amazing.

Step 3: Preheat the oven to Gas mark 5 and bake for about 30 minutes or until they are cooked all the way through.

Leave to cool and enjoy! Try serving with some sweetened quark or adding different flavourings.

  1. These look delicious, will have to give them a try!

  2. OMG! Are you sure those are only 2 syns!
I didn't know you could have chocolate muffins that looked this fabulous!
Def going to give it a try.
